SUMMARY:Allenberry Wine & Cheese Club Pairing
DESCRIPTION:Wine & Cheese Club: A Pairing Night\n\nThe Cellar at Allenberry\n\nTuesday\, December 15th 6:00 7:30 pm $30 per person 21 and over\n\nA certified Level 2 sommelier\, Sam Gibson of The Wine Merchant\, chooses every bottle on the list and will tell you where each one comes from and why it belongs beside the cheese in front of you.\n\nThe Flight:\n\nHarvest Moon 12 M Reserve\n\nHarvest Moon Reserve is cave-aged a minimum of 12 months. A rich\, round cheese with a moonscape-like outer rind an inside the color of autumnal leaves. Inspired by the French Mimolette\, Harvest Moon has a hint of sweetness and butterscotch notes that become more pronounced with age.\n\nPaired with Chateau de Saint Cosme Cotes du Rhone - Rhone Valley\, France \n\nMeadow Creek Appalachian Cheese\n\nOur goal with the Appalachian has always been to develop a cheese that showcased our milk\, milk from a herd developed to fit our farm's mountainous terrain\, rather than picking a benchmark cheese and struggling to match the farm to it. To this end we've kept the make simple and focused on affinage\, allowing the Appalachian to form a white coat of penicillium molds that compliments its unique flavor.\n\nAged for at least ninety days in our cellars\, Appalachian is a lush\, vibrant cheese evocative of cream and butter with a mushroom earthiness that recalls the intensity of the cellars. Its lemon notes shade to toasted as the cheese ages. The texture is velvety\, melting on the tongue.\n\nPaired with Tiefenbrunner Chardonnay - Sudtirol Alto Adige\, Italy \n\nPsycheDillic Fresh Goat Cheese\n\nIts dill-iciously dill-ightful. Its so good\, it will make you dill-irious See where were going with this? If youre a dill fan\, this is without a doubt the cheese for you. PsycheDillic is a fresh goat cheese with just the right amount of aromatic and hand-harvested dill pollen\, creating a surprising depth of flavor with a tart and bright finish. We use the finest ingredients we can get our hands on\, and always start with the highest quality milk the building block for our entire line of cheese.\n\nPaired with Esk Valley Sauvignon Blanc - Hawke's Bay\, New Zealand \n\nSeating is limited.
