A certified Level 2 sommelier, Sam Gibson of The Wine Merchant, chooses every bottle on the list and will tell you where each one comes from and why it belongs beside the cheese in front of you.

Shropshire Blue Cheese

Produced by the family-run Cropwell Bishop Creamery in Nottinghamshire, this award-winning Blue Shropshire has an exquisite nutty flavour, shot through with spicy notes.The delightful taste and creamy texture are matched by its beautiful appearance, as blue veining radiates through the deep orange body.Another award winner from Cropwell Bishop, their Shropshire Blue was crowned Supreme Champion at the 2016 British Cheese awards in addition to being awarded Best Blue Cheese and Best English Cheese.

White Stilton with Mango & Ginger

White stilton is made the same way as Blue Stilton without the addition of the blue mold. Its clean, fresh, slightly acidic flavor works great with the sweet dried mango pieces and spicy crystallized ginger bursting through. Lightly textured and crumbly, this cheese is delicous served on ginger biscuits with creme fraiche.

Our Cave Aged Buttermilk Basque

Our Cave Aged Buttermilk Basque is a true taste of Basque country by way of our New York City cheese caves. Made using 100% sheeps milk wheels from the Pyrenees, which we develop into a rich, nutty cheese by aging them in our Natural Rind Cave. The result is smooth and creamy, with a touch of earthiness at the rind, a cooked-milk sweetness, and touch of tang.
